Chilled Cucumber-kefir soup to cool the soul on a blistering summer day
Seed and peel and chop 3 large cucumbers. Put in a vitamix or blender and blend till smooth. Add some fresh or roasted garlic (2-3 cloves for a kick) and chopped dill and or parsley. Blend again. Then add 3 cups kefir* or plain drinkable yogurt. Mix again, salt and pepper, and chill for at least 30minutes. This can also be made a day or two in advance and frozen (just add garlic when ready to serve)
* kefir is a Russian drinkable yogurt that you can find in the health foody/ organic type dairy isles or sections. Also at whole foods and such.
